This Week's CSA - Week 7!

Week 7

There’s nothing better than fresh, locally grown herbs! These tiny tender leaves can elevate any home cooked dish by adding lots of flavor without the added salt or fat. To highlight one of my favorite herbs—and one that made its appearance in this week’s CSA box—let’s talk about basil. Basil is a rich source of calcium, potassium and iron. With 85% of your daily-recommended vitamin K intake in just one-tablespoon! Plus basil is a great antioxidant.

So besides basil, what else was in this week’s box: beets, cherry tomatoes, broccoli, potatoes and rhubarb.

Unfortunately, there’s a little bit of everything left over in the fridge (except for the rhubarb, which was given away in exchange for a strawberry rhubarb pie – trades are hard sometimes).  So, where did we go wrong this week? Socializing over the long weekend? Maybe? However, the good news is that all those leftovers will sit in the fridge for another week without having to be composted, so I have some time to make up for my bad behavior.

Here’s a Basil Pineapple Smoothie recipe I wanted to try this week (but didn’t).

  • 1 ½ cups frozen pineapple

  • 1 cup spinach

  • 2 tbsp coconut milk

  • ¼ cucumber

  • 8 fresh basil leaves

  • 1 medjool date

  • Juice of half a lime

  • ½ - 1 cup water as needed

  1. Combine all ingredients in a high-powered blender and blend until smooth. Serve immediately.
